Very disappointed: much promised - little kept

Already at the time of booking we stated our food intolerances. We were fully promised these would be taken into account at breakfast, snack and dinner. For safety's sake we reminded 1 week before arrival again by mail. We were assured: No problem. But it was.
The kitchen was in no way prepared for our needs and the service staff completely lacked the information. At almost every meal, we had to complain, discuss and listen to accusations ("you should have notified us in advance") and expletives. On the evening of the second day we sought the basic discussion with the boss, who informed us through the flower that we were not welcome. O-tone: "To implement this is far too much effort for our kitchen. I have to think carefully about accepting such guests again."
It remained a constant struggle, rising to the sad climax: The boss loudly accused us in front of an assembled crowd of guests that we should be grateful for the effort - instead of apologizing, as would have been appropriate, for the many mishaps and poor communication of the staff.
Only after we got the opportunity to talk to one of the chefs in person did it get better from day 5 of our stay. We were able to take some meals smoothly. Overall, however, it remained difficult until the end. Our allergens were not consistently observed and often there were no alternatives to the standard offer.
We acknowledge the efforts of the kitchen and service staff, but we must be very clear: This house is definitely not suitable for food allergy sufferers!
We had to fight hard for what we were promised in advance and yet it was not implemented at every meal. This has greatly clouded our holiday pleasure, to say the least.

Our everyday life is exciting enough, so we are looking for peace and quiet on holiday. Before booking we asked if we were safe in the hotel from the excesses of the "Cologne Week". The receptionist told us: "We did an event for Kölsche Woche once - that was terrible. The drunken horde ravaged so much in a matter of hours, we're not guaranteed to do that a second time. You can count on that."
This promise also turned out to be misinformation: Cologne party with booming loud music until 1.30 at night and then still grumbles, so that even in the 3rd century Cane to sleep was unthinkable.
This also led to great resentment among other guests. It was agreed: Staying in this house is simply too expensive to spend one of the nights sleepless.
The worst thing for us was the boss' handling of the two points. No excuses. No redemption. Nothing.
Our conclusion:
We were really looking forward to the holiday and were bitterly disappointed.
